The average rule is the lighter the better to make it easier to handle. Most of the Kap people use a small digital camera but Brooks has some photos on his site of larger 35mm dual camera rigs. It all depends on the wind and the kite. The famous photos taken just before and slightly after the San Franscio earth quake that destroyed the city were taken with a huge camera. I would have to look it up to be exact but as I recall it was in the 50-80 pound range.

New cameras like the go pro are very durable in a hard plastic case so the other concern that occurs when the wind shifts or dies is what happens when the landing is not quite as controlled as you would like. That being said quite a few Kap'ers use very expensive wide angle lenses and pricy cameras. Years of experience help them to decide what will fly on a given day.
